Chinese Bhel

Chinese Bhel Recipe:




Ingredients:


2 cups noodles 
2 tablespoon chopped red onion
½ cup cabbage very finely shredded
1 Roma tomato chopped
2 tablespoons green bell pepper chopped
2 tablespoons Cilantro chopped
2 stalks of green/spring onion chopped
1/2 teaspoon very very finely julienned fresh ginger
2 tablespoons Oil



Optional:

Any vegetable of your choice
For the sauce:
11/2 teaspoon chunky peanut butter
1 teaspoon of light soy sauce
1 tablespoon ketchup
1 teaspoon vinegar
1 teaspoon Sriracha or any hot sauce 



Method:

Boil noodles in six to eight cups of salted water to which a tablespoon of oil has been added and cook until almost done. Drain, refresh in cold water, drain again and spread on a large plate to cool. Heat enough oil in a wok noodles and fry until crisp and golden brown in color. Drain and place on absorbent paper. Once cooled slightly crushed fried noodles and set aside. In a large bowl, stir fries, vegetables, noodles and stir to mix well. Add sauce and stir the mixture again. Transfer this mixture into individual plates and garnish with leaves of spring onion.
