Curry Crunch Recipe:
Ingredients:
1 cup Greek yogurt
Juice of 1 lemon
2 tablespoons curry powder
1 tablespoon honey
1 teaspoon of turmeric
1 teaspoon ground cardamom
Ground cinnamon, for dusting
3 tablespoons olive oil tablespoons extra-virgin
Salt and pepper
3 cups chopped poached chicken
1 cup seedless red or black seeds, halved
4 green onions, finely sliced on an angle
1/4 cup slivered almonds, toasted
4 naan bread, heated
Method:
In a medium bowl, combine yogurt, lemon juice, curry powder, honey, turmeric, cardamom, sprinkle with cinnamon, then stir in EVOO bowl.
Season with salt and pepper.
Add chicken, grapes, green onions and almonds to the sauce and toss to coat. Serve with naan bread.
