Roasted Bread

Roasted Bread Recipe:


6 large slices Italian bread
2 tbsp olive oil
2 cloves garlic, finely chopped
2 Lebanese cucumbers
8 ripe Roma tomatoes
1 red capsicum
1/2 cup olive oil
1/3 cup red-wine vinegar
100g black olives, pitted and finely chopped 
1 tbsp chopped rosemary


Preheat oven to 180C. Line a baking sheet with parchment paper. Brush both sides of bread with olive oil, place on the tray and sprinkle with garlic. Bake for 10 minutes or until the bread is pale golden brown.Chop cucumbers, tomatoes and peppers diced 1cm. Place in a large bowl. Break the bread into pieces and add to cucumber mixture. Put the oil, vinegar, olives and rosemary in a small bowl and whisk.
